So I began thinking... Ok... Lamb meat... what sort of recipe can I do with that? We were already planning on using the grill to make a chicken... What could I do with ground lamb on the grill. Burgers were out, since this was supposed to be an app, so I thought why not make a summer version of a popular holiday app. Meatballs! I'm happy to say, they turned out great, and were simple to make.
Here is what you need to do. Mix 1lb ground lamb with about 3/4 cup chopped up dark cherries, mix in 1/2 cup chopped basil, 1/2 cup panko bread crumbs, and 1 egg. Season with salt, pepper and a about 2 tablespoons ground fennel seeds. Once its all mixed and formed into meat balls, get them on the grill on MEDIUM heat. Medium heat is important, because they need to call all the way through not just burn on the outside. So low and slow on this. Once they are done, glaze them with a mixture of hot chili sauce mixed with cherry preserves that you can easily blend together and reduce in a small sauce pan while they grill. Thats it! Sweet, spicy, and great Summer grilled meatballs!
