Xing Xing is a new restaurant who’s owner is 1st generation Vietnamese. Even after vandals broke the window to her new restaurant, it hasn’t stopped her American dream and hasn’t stopped her from wanting to help the community she loves.

Today, I had a chance to chat with the owner during an episode of “The Good Stuff”

Here’s the complete interview and a transcript of what Elaina had to say

“I started Rice and Roll by Xing Xing right before July 4, 2019. I had just stopped working as a waitress at a restaurant. I’ve been dreaming about opening a restaurant since i was in high school, but back then i planned with a friend. My English wasn’t good so my friend was going to take care of the business side and I’d take care of the kitchen side. After graduation, she moved to Texas so I put this dream aside and started waitressing. In 2019, I began to work on my life-long dream and started selling egg rolls online. In August 2019, I had to stop because I was reported to the health department. In all honesty, I didn’t do enough research and did not know that I couldn’t sell food from home. I stopped the business then until the beginning of 2020 when I got paperwork approved. My parents in Vietnam saw my dream so they made a small investment and helped me open the restaurant you know today. This business is meaningful to me so I want to operate it with meaning in everything that I do.

I have wanted to help feed those in need with my cooking since the time I lived in Viet Nam. I want to spread love and peace through food. This community has supported me and my business so I want to do my part and support you.

I have built Rice and Roll by Xing Xing from the ground up and it is my life work. It was sad to see the restaurant vandalized when it was first opened. I want everyone to know that the incident motivated me to work harder. Opening a restaurant is difficult and i am not going to let negative comments keep me from doing what I love. A window can be replaced and my spirit stands. I think as business owners and community members, we should stand together and support one another, especially during these hard times. I want Wichita and our community to know that I stand with you and I respect you.”
